Pineapple Coconut Cocktail

A chocolate inspired version of a piña colada.

For 4-5 servings

Ingredients

  • 2 ½ cups (600ml) Pineapple juice
  • 1 x 3.5oz (100g) Bar LINDT EXCELLENCE White Coconut, chopped
  • ¼ cup (60ml) Rum
  • 1/3 cup (80ml) Coconut liquor
  • 2/3 cup (160 ml) Crushed ice

Serve in tall glasses over crushed ice

    Heat the pineapple

    • Heat the pineapple juice in a sauce pan until it comes to a boil, remove from heat.

    Stir in the chocolate

    • Stir in the chocolate. Continue stirring until completely melted.

    Add rum

    • Add rum and coconut liquor.

  • 4

    Chill

    • Chill completely. Shake or whisk before serving.
